Who started food on a stick and why does it always taste so good? This chicken marinade is one of our favorites. It's not really spicy, a bit sweet but not too sweet and the lime juice just gives life to the flavours. I like to serve it with roasted or baked potatoes, corn on the cob (a summer staple), fresh buns, a big salad and you're good to go! The perfect menu for a sunny day:)
Let's get to the recipe . . .
Chicken Kabobs
Marinade (enough for about 1 chicken breast) Add and stir until combined 1 tbsp. b. sugar 1 tbsp. olive oil 1 tbsp. fresh lime juice (about 1/2 lime) 2 tsp. chili powder 1/2 tsp. sea salt 1/4 tsp. ground pepper
Cut your chicken breast into chunks - pieces that fit nicely on your skewer
Place the chicken into a bowl or ziploc bag and pour the marinade over top.
I like to leave this for a few hours.
Thread the pieces onto your skewers (if you're using wood skewers, soak them in water so they don't burn)
Pop onto your barbeque and remember to turn them to get all the sides done.
