Do you have friends or family that are needing to be gluten-free but you still like to bake them something? Here's a recipe I discovered. I was looking for something to use up some cans of condensed milk that I seem to have collected (seems I was buying them over and over - why do we do that?) Sweetened condensed milk recipes always seem to include magic bars - they are a favorite, which is likely why I had so many cans of it in my pantry - but I came upon this gluten-free version. I have a few people in my world that are gluten-free so thought I'd give this a try. Here's the breakdown - delish! The same gooey, chocolatey, coconuty taste but with an oat bottom. It got 5 stars and a big appreciation smile from my gluten-free taster - in fact, wanted they to take the whole thing home! My non-gluten-free tester, he just kept eating it lol.
So. . . to the recipe-
Gluten-free Magic Bars
Line a 9x12 baking dish with parchment paper (this makes for easy removal of the bar) I give the bottom a smear of butter to hold the paper in place.
mix together 1 1/2 c. gluten free oats 1/2 c. melted butter Press into the bottom your baking dish.
Pour a can of sweetened condensed milk (300ml) evenly, over the oats.
Sprinkle 2 cups of chocolate chips over the milk
Sprinkle 1 1/2 c. shredded coconut over the chocolate
Lightly press down the coconut with your hand.
Pop into your oven at 350 for about 20-25 minutes until lightly, golden brown.
Remove and let cool. Lift out of pan with the edges of your parchment paper and cut into squares.
