Sorry for the small pause in posting recipes! I moved in with my grandkids (2 and 4) while their parents travelled for work. I was with them for 8 days and it gave me renewed respect for working parents with little kids! I loved every moment, but, my oh my, it's busy! As soon as that week was done, my girls and I headed to Toronto to see Taylor Swift and yes, it was incredible! While all that was happening, we were getting Christmas out at the store and that too is a lot of work. So you see, I was a bit busy and not much baking was done in my house. This recipe is one that my grandkids and I made together while I was with them. It's so easy, 1 bowl and it's a really good banana muffin. It's great to make with kids and it's a really tasty little muffin.

Let's get to the recipe. . .

Banana Muffin

In a large bowl, mix together
3 very ripe bananas - mashed
1 tsp. b. soda
1/2 c. vegetable oil
2/3 c. sugar
2 large eggs
1/8 tsp. salt
1 1/3 c. flour

Add in 1/2 c. mini chocolate chips (these are optional but we feel a must have!)

Pour the batter into your greased muffin tin, loaf pan or mini muffin tin.

Bake until golden and a toothpick comes out clean. The baking time will depend on what you bake the batter in.
