The one thing I always try to make every week is homemade granola. It's such a good snack (yes, we do eat it by the handful) but we do love it on yoghurt and in our smoothie bowls. I usually make the same granola, but I thought I'd try this peanut butter version. It is sooo, sooo good - I add in chocolate chips (optional but in our house necessary) almost like a healthy version of a peanut butter cup and it's good for you. Are you up to try it?
Let's get to it....
In a bowl, add in
3 c. large flake oats
3/4 c. nuts (I like slivered natural almonds but any would work - just use raw nuts)
3/4 tsp. sea salt
Into a separate bowl add in
1/3 cup natural smooth peanut butter
1/4 cup honey
3 tablespoons coconut oil
Melt together and stir until smooth
Add in
2 teaspoons vanilla extract
Add to the oat and nuts and stir until well mixed.
Spread onto a parchment lined baking sheet
Bake at 350 for about 15 minutes, stirring once halfway through.
When cool, add in 1/2 c. chocolate chips.
Stir and keep in an airtight container.
