If you love Mini Eggs (and who doesn’t?) you're going to love this super easy, no bake recipe.  It's a simple riff on the traditional Rice Krispie Cake and we all know how easy that is.  The hardest part of this recipe (minus the not eating all the mini eggs) is smashing them to put into your rice krispie cake!

Mini Egg Rice Krispie Cake

Into a saucepan add and stir until smooth
5 Tbsp. unsalted butter
7 c. mini marshmallows

Remove from heat and add in 
1 tsp. vanilla
1/4 tsp. salt

To the marshmallow mixture
Add in and stir until coated
6 c. rice krispies

Add in
1 c. smashed mini eggs

Spread and press into a greased or parchment lined,  9x9 baking dish.

Melt and drizzle over top
1/3 c. milk chocolate chips 

Sprinkle 
1/4-1/3 c. smashed mini eggs over top of the drizzle.

Let set and cut into bars or squares.
