What's the best kind of cake in the summer? No, this isn't a riddle, LOL. It's an icebox cake! A cake that is super easy, and requires no baking. Have you heard of these? I had, but not with Chips Ahoy cookies - this was new for me, so of course I needed to try it. It's darn delish, but my warning - it's quite rich, so small pieces are sufficient - at least in my opinion;) Let's get to the recipe. . . Chips Ahoy Icebox Cake Whip together and set aside 3 c. whipping cream 1/4 c. + 2 tbsp. icing sugar 1 1/2 tsp. vanilla In a bowl, add in some milk - about 1/2 cup or so (you are going to dip your cookies in this 1 pkg Chips ahoy cookies Hot fudge sauce - use this not syrup (syrup is too runny) Line your loaf pan with saran wrap (I tried parchment paper and it was a fail! It got soggy and tore when I was removing the cake from the pan) Now we start layering - you're going to do 3 layers 1 layer of whipped cream top with cookies that have been dipped in milk. Break your cookies if needed so that you have a full layer of cookie. Squeeze hot fudge over top and spread with a spoon or knife. Repeat 2 more times Finish with whipped cream. Freeze until firm (about 4 hours) Enjoy!!
