Who doesn't love a really good cookie? Whether you eat them warm out of the oven (the best) or out of a cookie jar, there is a good amount of satisfaction that comes from them. It's a sweet treat that my family loves. I sometimes use them as a base for ice cream (bake them in a muffin tin or a rammekin - so good) but usually, we just eat them warm off the baking sheet! I was going thru some old Canadian Living magazines and found this recipe. It's a good one - most of the Canadian Living recipes are pretty, darn good. The only change I might make when I make these again, will be to lessen the amount of white chocolate chips and add in some chocolate chips - cause you can never have too much chocolate;)
Let's get to the recipe . . .
Chocolate White Chocolate Chip Cookies
In the bowl of your mixer, cream together until light and fluffy 1 c. unsalted butter, room temp 1 c. sugar 1 c. b.sugar
Add in, 1 at a time 2 eggs
Add in 2 tsp. vanilla.
In a small bowl, mix together 2 1/2 c. flour 2/3 c. cocoa 2 tsp. b. soda 1/2 tsp. salt
Slowly add the dry to the butter mixture until just combined.
Stir in about 2 c. white chocolate chips.
Drop onto a cookie sheet, and bake at 350 for about 7-9 minutes.
