This is a dessert that I love in the summer. A good fruit crisp is so satisfying - it's sweet, it has the crunch on top and it's so quick and easy to make. Better yet, warm with a big scoop of ice cream - soooo, soooo good! So let's discuss this recipe. This recipe is really good - had 5 stars from lots of reviewers online, so that was a good start. I found it easy to cut in half (sometimes you just need a smaller dessert), the sweetness level was pretty perfect, texture of crumble - very good and my best review - none left after dinner and thumbs up by all my testers (and believe me, they're brutally honest lol).
So, let's get baking.....
Peach Crisp
In a large bowl add in and mix together About 8-9 c. sliced peaches (the actual measurement for this was 3 lbs) 2 tbsp. fresh lemon juice 2/3 c. sugar 2 tbsp. cornstarch 1/2 tsp. vanilla 1/8 tsp. salt
Put into a greased baking dish that will nicely hold your peaches - you can also make individual size crisps in a ramekin.
Topping In a bowl, combine 3/4 cup packed b. sugar 3/4 cup flour 1/2 cup oats 1 tsp. cinnamon 1/4 teaspoon salt Add in, mixing with a fork (or your fingers) until crumbly 1/2 c. cubed unsalted butter (I like to use cold butter and grate it into the mixture, I find this makes it easier to get the crumble consistency.)
Sprinkle the topping over the peaches (you may want to double the topping if you like prefer lots of the crumble)
Bake at 350 for about 35-40 minutes, until the peaches have sofened and it's bubbling around the edges.
