Bananas. My favorite way to eat them is in a good loaf, muffin or cake - lol. I know, not as healthy, but all in moderation, right?! This is a recipe that I've had for years. It's a favorite of my family and their eyes light up when I make this for our Sunday suppers. It's kind of coffee cakeish, but it's cakeish enough to serve as a dessert. It really is an all purpose kind of banana recipe. I must warn you, this is very addictive and it's hard to stop at 1 piece - just saying;)

Banana Cake with Chocolate Chip Crumble
Streusel Topping
In a bowl, combine and mix (you can use your fingers) 1/2 c. b. sugar 2 tbsp. cocoa 1/4 c. butter (room temp) 1/2 c. flour 1/2 c. chocolate chips
Banana Cake
In a bowl, combine and mix 1 1/2 c. flour 3/4 tsp. b. soda 3/4 tsp. b. powder 1/4 tsp. salt
In the stand of your mixer, cream together 1/2 c. unsalted butter (room temp) 3/4 c. sugar
Add in 1 large egg 1 1/3 c. mashed banana (the riper the better!) 3 tbsp. sour cream
Stir in the flour mixture to the banana mixture until just combined.
Spread 1/2 the banana batter into an 8"x8" baking dish that has been greased and floured or you can line your pan with parchment paper (my personal choice - so much easier to take the cake out)
Sprinkle 1/2 the streusel onto the banana batter
Spread the remaining batter by spoonfuls onto the streusel, spreading it carefully so as not to disturb your streusel.
Sprinkle the remaining streusel over top.
Bake at 350 for about 30-40 minutes, until a toothpick comes out clean, or the top springs back when lightly touched.
