I found this recipe on a Facebook post by Jennifer Garner (the actress) not sure why her video popped up but I'm glad it did! She does, what she calls, a pretend cooking show (I'm now a fan!) It's in her kitchen, it seems she's usually doing it early in the morning (without makeup and just rolled out of bed) to get something ready for her kids. She's a little bit awkward, very much a home cook and I find her really fun to watch. She shared these ginger snap cookies which were a cookie she grew up with and she raved about them! So, here's my opinion of these cookies - very, very good - in fact there was some 'drawing of straws' to see who would get the last one! That good:)
Ginger Snap
Mix together in a large bowl
3/4 c. shortening
4 tbsp. molasses
1 egg
1 c. sugar
In a separate bowl, mix together
2 c. flour
3 tsp. b. soda
1 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. cloves
1 tsp. salt
Combine dry into wet ingredients, mixing until combined.
Sprinkle a plate with sugar and set aside.
Scoop out into by tablespoon (or whatever size you'd like your cookie to be), rolll it into a ball and then roll it into the sugar that is on the plate.
Place onto a parchment lined cookie sheet and bake for about 10 minutes at 350 degrees (make sure if your cookie is smaller or larger that you adjust your baking times).
Remove from pan and let cool.
