This week I made granola, like I do most weeks but this week I tried a different recipe. This recipe is out of a cookbook that we sell in the store (we're sold out right now, but let us know and we'll put you on a waitlist). It's Plant Over Processed and is a really interesting cookbook. Lots of good info and lots of easy, healthy recipes - all plant based. If you don't follow her on instagram Earthy Andy or facebook, you should look her up - I find her fun to follow:) But, back to the granola. This granola is really easy, super quick and you can add in whatever nuts or dried fruit you like. Ours was gone in a weekend! That good - you just keep grabbing a handful;)
Granola
In a large bowl, whisk together 1/3 c. maple syrup 1/3 c. coconut sugar 4 tsp. vanilla 1/2 tsp. fine sea salt 1/2 c. melted coconut oil
Add in and stir until coated 5 c. oats (I like to use large flake) 1 c. chopped walnuts 1 c. slivered almonds
Spread onto a parchment lined baking sheet. Bake at 350 degrees, turning once, for about 30 minutes.
Remove from oven and stir in 1 cup dried cherries.
Store in a airtight container and enjoy by the handful or on your favorite yogurt.
