I had a craving for a really good bakery style muffin, specifically, I wanted orange with chocolate chips. If you've never had this combination, you really should give it a try. I always turned my nose up at this combination - I just didn't think that I'd like the chocolate and orange combo - I was sooo wrong. This combo is Delish with a capital D - and this muffin - oooh baby - super moist, good crumb and such good flavor - in fact I made them twice last week. Are there leftovers or some in my freezer? Sad to say nope - all in our bellies - lol! Moral of the story - eat a muffin, enjoy the muffin and maybe more moderation than we have in our house! ( p.s you can make these without the chocolate or the glaze and they are still a winner of a muffin.)
Orange Chocolate Chip Muffins
In a large bowl combine and set aside 1 3/4 c. flour 2/3 c. sugar 1 tbsp. b. powder 1/2 tsp. salt 3/4 c. dark chocolate chips
In a separate bowl, whisk together 1/2 c. unsalted melted butter (your butter should not be too hot) 1/4 c. freshly squeezed orange juice zest of 1 orange 1 large egg 1 c. sour cream
Gently mix the wet ingredients into the dry ingredients until just combined
Place the mixture into a lightly greased muffin tin - I used the mini loaf muffin tin and it made 8 perfectly sized mini loaves - here is the link to our website in case you need it:) https://cdn.shopify.com/s/files/1/0410/5656/7455/products/630870280730-LeCreuset8CupLoafTray_2000x.jpg?v=1609955892
Bake at 350 for about 14 minutes depending on your oven.
Remove and let cool before you drizzle the glaze.
Glaze (optional - but if you've gone this far - why not?) 1/4 c. fresh squeezed orange juice 1 tsp. orange zest 3/4 c. icing sugar
