It seems we're not eating our bananas quick enough! Or maybe it's intentional, because baking with bananas is so satisfying. This little snack'n cake (if you grew up in the '70's and '80's these were really a thing) is a little denser that a banana bread, has great texture and just the right amount of chocolate!
Let's bake. . . .
Chocolate Chip Banana Snack'n Cake
In a bowl, mix together
1 3/4 c. Flour
1 tsp. b. soda
1 tsp. salt
In the bowl of your stand mixer, cream together until light a fluffy
1/2 c. unsalted butter (room temp)
3/4 c. sugar
Add in
2 lg. eggs
3 very ripe mashed bananas
1 tsp. vanilla
Slowly add the flour mixture to the banana mixture, mixing until just combined.
Gently, by hand add in
1/2-3/4 c. chocolate chips (no judgement here on how much you add in)
Spread into a 8x8, parchment lined baking dish.
Sprinkle chocolate chips over top.
Bake at 350 for about 30 minutes, until the top pops up when lightly touched.
Let cool for a bit before removing it from your pan.
