I'm going to admit that I don't really cook fish very often. I've never really been a fan, but maybe because I don't really know how to cook it! This recipe has changed my opinion on fish. I LOVE this recipe! I've made it twice in 2 weeks and it's delish. It's from a favorite cookbook of mine, Yum & Yummer and it does not disappoint. It's easy, very flavourful and is even good reheated the next day. So, will you try it? It's very good for you;)
Let's get to the recipe. . .
Asian Salmon Fillets
In a bowl, mix/whisk together
1/2 c. hoisin sauce
2 tbsp. lime juice (fresh squeezed)
1 tbsp. liquid honey
1 tbsp. reduced sodium soy sauce
1 tbsp. grated ginger
2 tsp. sesame oil
1/2 tsp. grated lime zest
Arrange 4 (5oz) salmon fillets in a shallow baking dish and pour the marinade over top, turning to coat both sides.
Cover and pop into the fridge for 2 hours if possible - I've done less and it's still delish.
Place your marinated salmon fillets on a parchment lined baking sheet.
Drizzle the extra marinade over top.
Roast for about 10 minutes at 450 or until the salmon flakes easily with a fork.
Serve with rice and whatever veggie you like! I added green beans, mixed with a bit of olive oil to my sheet pan and they cooked perfectly with the salmon.
