Do you love a good scone? Every Saturday morning, before we open the shop, the Crocus team heads to a coffee shop to start the day with a scone and a good cup of joe - a day we all look forward to! We have a good chat, solve the world's problems and get ready for a busy day with our shoppers. Did you need to know that? Probably not, LOL. What you're really interested in is the recipe! So, here we go. This scone is filled with chocolate and pecans - almost too much, so when you're making the recipe - you decide how much you'd like to add. This recipe also has a baking temp of 400 degrees, which worked but I'm thinking next time I going to try 350 degrees - I'd love your feedback on this! This scone was tasty, and the texture was very much like a biscuit, so all in all, a very good scone:)
Let's bake. . .
Chocolate Pecan Scone
In a large bowl combine
2 2/3 c. flour
1/2 tsp. salt
3 tsp. baking powder
1/2 c. b. sugar
1 tsp. cinnamon
Add to the dry
1/2 c. ice cold butter (I use a grater to get mine into small little pieces. If you don't have a grater, cut your butter into small pieces)
Using your hands, mix this together until it looks like small stones.
In a bowl, add and mix
1 egg
3/4 c. cream (I used whipping cream)
1 tsp. vanilla
Add the wet to the dry, using a fork to combine (It will be a craggy dough and will come together in the next step)
Add in and mix
1 1/2 c. chocolate chips
3/4 c. chopped pecans
Dump the mixture onto a lightly floured surface and gather it together. Knead it a few times (I split mine into 2 piles)
Work the dough into rounds and cut into triangles.
Place on a parchment lined cookie sheet
Mix together and brush on top
1 egg
1 tsp cream
Bake at 400 for about 18 minutes
