Yup, I'm still using up Zucchini! But, I think this is it LOL. This is an old, old chocolate zucchini loaf recipe that has been in my recipe box forever. It's tattered, stained (which you know that means it's a good recipe) and it's tasty. A one bowl recipe and pretty darn good! It's texture is cakey, not heavy, a decent chocolate flavor and of course, a generous addition of chocolate chips. p.s. if you don't have any zucchini left, you may just have to go find some;)
Let's get to the recipe . . .
Beat together 3 eggs 1 3/4 c. sugar
Mix in 1 c. oil 2 tsp. vanilla
Add in 2 c. shredded zucchini (if it's quite wet, pat it with a paper towel to get a bit of the excess off)
Add in 2 oz. of melted unsweetened chocolate that has cooled a bit
Add in and mix until blended 3 c. flour 1 tsp. b. powder 1 tsp. b. soda 1 tsp. salt 1 tsp. cinnamon
When combined
Add in mini chocolate chips - use as many as you like
Pour into a parchment lined loaf pan. Bake at 350 for about 50-60 minutes, depending on the size of your pan.
Top should spring back and toothpick should come out with just a few crumbs.
