A recipe just in time for the long weekend. Make these ahead and keep them in your freezer! This is an easy chocolate chip cookie recipe that is just begging to be made into an Ice Cream Sammie. This is a standard dessert/snack in our house all summer long - they're easy, you can make them ahead and who doesn't love ice cream and cookies?
Let's get to the recipe. . .
Chocolate Chip Ice Cream Sammie
Cookie Whisk together 2 1/4 c. flour (spooned into measuring cup) 1 1/2 tsp. cornstarch 1 tsp. b. soda 1/2 tsp. salt
With your mixer, cream together 3/4 c. unsalted butter (room temp) 3/4 c. b. sugar 1/2 c. sugar 2 tsp. vanilla
Add into the butter mixture and mix together 1 large egg 1 egg yolk (they should be at room temp)
Slowly add the dry ingredients to your butter mixture
Stir in 1 1/4 c. chocolate chips.
Drop onto your parchment lined cookie sheet and bake at 350 for about 9 minutes, until lightly golden. Depending on the size of your cookie, your baking time may vary.
Let cool.
Add a generous scoop of vanilla ice cream to a cookie bottom and gently press another cookie on top, gently pressing down.
You need to work in small batches. Do a few and pop them in the freezer, repeat until you have as many as you want.
Another way that I sometimes do them is by letting people make their own - the only difference is that the cookie is not frozen which some people prefer.
