This is a recipe that I like to make when I'm feeling like a healthy treat. These are really satisfying, and they're good for you! Found this recipe years ago when Dr. Oz first made an appearance. It was a recipe that he was promoting for good health. I tried it and loved it. He didn't have the chocolate chips in his, but how can you not add a sprinkle of chocolate chips;)
*I goofed when I made this to photograph - I doubled the recipe but added too many oats, so this photo is a bit more crumbly than it should be - still tasted great, just didn't hold together as it usually does.
Mix together 1/2 c. natural peanut butter 1 tsp. vanilla 3 tbsp. honey
Add in and stir well 1 c. quick oats 1/3 c. dried cherries (chopped) 1/3 c. mini chocolate chips
Press firmly into a parchment lined baking dish - you can do an 8x8 for a thinner bar or a smaller dish for a thicker bar. I also like to roll them into balls when I have the time!
