Have you heard of Clodagh Mckenna? A friend just recently told me about her - she has a great instagram feed, her stories are great, she's a cookbook author and chef and is super entertaining to watch - I'm hooked:) That same friend sent me a picture of her Carrot Cake Loaf that she had just made - so I decided, since it got great reviews from my friend, that I should try it. This carrot cake is simple, one bowl and really, really good. I thought I'd make mine in my very favorite new mini loaf pan from Le Creuset, which made them look so pretty laid out on my platter. My only complaint was that the recipe uses some ingredients and measurements that I had to convert, so I did the work for you and it's still a super easy recipe. I hope you look her up - she's lots of fun to watch;)
Carrot Cake
In a large bowl, beat
3 eggs
Add in
1/2 c. + 1/8 c. veg. oil (5 oz)
1 scant cup b. sugar (do not pack) (7 oz)
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated carrots (12 oz)
1/2 c. raisins (100 g) (I like to put mine in a cup of boiling water for a couple of minutes to plump them up - drain them and then use)
1/2 c. chopped walnuts (100g)
Give the above a bit of a mix and add in
1 c. flour (spooned into measure - do not want to overuse flour by packing it into the measuring cup)
1 1/4 tsp. b. powder
1/4 tsp. salt
1/2 tsp. b. soda

Bake at 350 - for the loaf, depending on the size of your loaf pan about 1 hour, for the mini loaf about 15 minutes until the top springs back and a toothpick comes out clean.
Let cool for a few minutes and remove from your pan and let cool on a rack.
When cool frost with Cream Cheese Orange Icing
Cream Cheese Orange Icing
Beat together until smooth
4 oz cream cheese (room temp)
1 tbsp. butter (room temp)
Add in
1/2 tsp orange zest
1 tbsp fresh orange juice
1 1/2 c. icing sugar
Beat until a smooth and the consistency is spreadable (add a little more juice if needed or icing sugar - whichever makes the icing what you like.)
You can add a little orange zest to the top for an extra taste of orange if you like.
