A cookie that combines cereal and the goodness of a chocolate chip cookie - what?! How fun is that! Some of you may know about this cookie, but it's new to me. The recipe that I found did not include chocolate chips, but... you know, I just had to add them because in my world, everything is better with a bit of chocolate! This cookie is better when it's cooled - the cornflake is crispier. Not to say you can't eat them warm, out of the oven (cause we did lol), but if you do, the cornflake will be chewy - nothing bad about that, but my preference is on the crispier side. This is a really good cookie and it gives the traditional, plain chocolate chip cookie a run for it's money - this recipe makes about 24 cookies and in my house, they didn't last the day - yup, that good.
So... let's get to it.
Cornflake Cookies
In the bowl of your stand mixer, (using the paddle attachment) cream 1/2 c. unsalted butter - room temp Add in 1/2 c. sugar 1/2 c. packed brown sugar and beat together
Add in 1 eggs 1/2 tsp. vanilla
In a separate bowl combine 1 c. flour 1/2 tsp. b. powder 1/2 tsp. b. soda 1/4 tsp. salt
Add the flour mixture to the butter mixture, mixing together until combined
Stir in 1 c. quick oats 1 c. cornflakes 1/2 c. sweetend flaked coconut 1/2 c. chopped pecans 1/2 c. chocolate chips
Drop by spoonful or use your cookie scoop, onto a parchment lined baking sheet.
Bake at 350 for about 9 minutes, until edges are lightly browned.
