We love a good fruit salad or as my kids always called it 'mixed up fruit'. It's so refreshing and delicious (and healthy), perfect for snacks, desserts, lunches - really anytime with any meal. This looks impressive with all the colors and the flavor is really good! I had a mixed review on this recipe - 1/2 liked the dressing, 1/2 preferred the salad plain - not that they didn't like it, they just like their fruit undressed;) So, you decide and let me know what you think.

To the recipe. . .

Honey Lime Fruit Salad

Into a bowl, add in (I used about 6-8 cups of fruit)
strawberries - cut into pieces
blueberries
pineapple - cut into pieces
grapes - I like to cut mine in half
mandarin oranges - cut in half

Honey Lime Dressing
1/4 c. liquid honey
2 tsp. lime zest
1 1/2 -2 tbsp fresh lime juice

Just before serving, pour the dressing over the fruit - you don't want to over saturate the fruit - just slightly enhance the flavours so you may not need to use it all depending on how much fruit you have in your bowl.
