I'm really trying to take advantage of all the beautiful fresh fruit we have right now. I know peaches are almost over but I couldn't resist just one more peach recipe. This is from Volume 2 of Magnolia Table and it's easy and really, really delicious. When you make this, you might think this is going to be a hot mess, but just wait for it. It's magical how it all comes beautifully together when it's in the oven!


Peach Cobbler

In a large saucepan combine
4 c. sliced peaches (peeled)
3/4 c. sugar
Cook over medium heat until the sugar is dissolved, the juice is a little bit thicker and the peaches have softened but still firm (8-10 minutes)

In a separate bowl, whisk together
1 c. flour
1 tbsp. b. powder
1 tsp. kosher salt (I subbed in 1/2 -1 tsp. fine sea salt)
1 c. sugar
add in
3/4 c. whole milk
mix until combined.

In an 8x8 baking dish, add in
1 stick (1/2 c.) unsalted butter
place into a 350 degree oven and let the butter melt (3-5 minutes)

Remove pan from oven and add the batter to the dish.

Spoon the peach mixture over top of the batter.

Sprinkle with cinnamon (about 1/2 tsp)

Put into your 350 degree oven and bake for about 25-35 minutes.
You should be able to put a toothpick in the middle and have it come out clean - the top will be golden brown.

Serve warm with a scoop of ice cream for best results!
