One of my favorite shows is Giada At Home. She makes beautifully simple meals and always with a nice little dessert to finish. This recipe is one of those - beautifully simple and delish. It's like a traditional chocolate drop cookie but not as sweet. It's perfectly balanced with chocolate and almond and the perfect treat for after dinner, with your coffee or as a little pick me up during the day. It's best served cold (I like them frozen as well) and is best kept in the fridge. A great summertime cookie with very little effort which makes these an even better cookie!

No Bake Chocolate Almond Oatmeal Drop Cookies

On a baking sheet, spread out and toast in a 350 oven for a couple of minutes until lightly golden and set aside.
3/4 sliced, unsalted almonds

In a saucepan combine
1 c. b. sugar
3 tbsp. cocoa
1/4 c. unsalted butter
1/2 c. unsweetened almond milk
Bring to a simmer over medium heat, stirring until smooth.
Let simmer for 1 minute and remove from heat.

Stir in until smooth
1/2 c. almond butter
3/4 tsp. sea salt

Stir in
2 c. oats
3/4 c. toasted sliced almonds from step 1.

Scoop by the tablespoon and set on a parchment lined baking sheet.

Top with a few mini chocolate chips.

Pop into the freezer for about an hour to set.

Store in fridge.
