Sometimes you just want cake! And sometimes it doesn't hurt to have sprinkles cause isn't everything better with sprinkles;) This cake is so incredibly easy and quick that there's not really an excuse to not make a 'from scratch' cake. This cake is done in one bowl, has good flavour and a very moist crumb. What's not to love?
Let's get baking . . .
Vanilla Confetti Crazy Cake
In a large mixing bowl, add in
1 1/2 c. flour
1 c. sugar
1 tsp. b. soda
1/2 tsp. salt
Make 3 wells in your bowl and add 1 ingredient into each well
1 tsp. vinegar
5 tbsp. canola or vegetable oil
2 tsp. vanilla
Pour 1 cup water over top
Mix together until fully combined
Add in 3 tbsp confetti sprinkles and gently mix.
Pour into a 8x8 pan that has been lined with parchment (easier to remove the cake)
Bake at 350 for about 20-25 minutes until a toothpick comes out clean.
Let cool and ice with vanilla frosting and top with sprinkles.
Dairy Free Vanilla Icing
Beat until fluffy
1/2 c. vegan butter
Slowly add in and beat until combined
2 c. icing sugar
1-2 tsp. oat or almond milk
*you may need to add a bit more milk to get to the spreading consistency.
